Chicken Tortilla Bake

Good morning everyone. Saturday night I cooked dinner for the boyfriend and I and I tried my first recipe from Pinterest. This Chicken Tortilla bake that came from here. It turned out delicious! I was a little worried about it while it was in the oven but it came out much better than I expected.



So here is what you need to make it:

  • 6 inch corn tortillas- I used about 9 of them but it is really a personal preference
  • 2 cans of cream of chicken 
  • 1 can of tomatoes and green chile peppers
  • 1/2 pound of cooked, chopped chicken
  • shredded cheese
How to make it:
  • Cut up your chicken and cook it. I used a frying pan just because it was the easiest way.

  • Either when you cook your chicken or after it is done, mix up your cream of chicken and the can of tomato and green chile peppers. 



  • Then cut up your corn tortillas into small, strip like pieces. There is no right or wrong on the size of them.
  • Once everything is cut up and the chicken is cooked, start by putting a layer  of the tortilla strips on the bottom of pan. I used an 8x8 pan and everything fit perfectly.
  • After you put the tortilla strips down put half of the chicken and then a layer of the cream of chicken-tomato and chile mix.


  • Repeat your layers and top with a layer of the tortilla strips.

  • Put in the over for 40 minutes at 350. The original recipe called for the pan to be covered while you cook it but I was out of aluminum foil so I didn't do that.
  • After it cooks for 40 minutes, take it out, sprinkle as much cheese as you want on top, and put it back in the oven for another 5 minutes or until the cheese is melted.


I cooked mine for an extra 2 minutes on broil so that it would cook a little better because I didn't have it covered in the aluminum foil.



So here is my score for the recipe:
Deliciousness- 8/10 It was a little spicy for my personal preference but Alex loved it
Easiness- 9/10 the only time consuming part is cooking the chicken but other than that it is extremely simple
Affordability- 8/10 The chicken was the most expensive part but other than that everything else was very cheap.
College Friendliness- 8.5/10 With high affordability and easiness scores it is perfect for a weeknight meal for a student. It doesn't take much effort and it tastes good even as left overs.

Sit Back and Relax...

Its the Sound of the South!

There is only 8 days till football kicks off!!! Okay, so I might be just slightly excited...but hey, I'm in the band, I am allowed to be. College football is what marching band revolves around, and this is my last year being in the band (which I am not ready to talk about yet) but I can't wait for it to start. Troy starts our season next week at the University of Alabama-Birmingham, at UAB. When I started college, I knew very basic football. And by basic, I mean basic...like you throw the ball and have to get it to one endzone or the other and that refs throw flags for things, that was it. But now that I am in my senior season and have had three intense football seasons, I actually understand the rules. And I have to say, I have grown to really love football. It is one of my favorite times of the years.

Now after I graduate and get to come back as an Alumna for football games, one thing I am really excited about is getting to tailgate. College band leaves no time for tailgating. We have to be at rehearsal early on home game days and then get in uniform and we will be in the stadium a minimum of an hour and a half before kick off. But when I do get to tailgate, I have already started looking at recipes to make. So here are a few of my favorite tailgate recipes that I have found on Pinterest.

For the Early Kick Off:

These things are so adorable and so easy to make. And this year, we have several games that are early kick offs so these are perfect. I mean who wants to eat a casserole at 9:00 am? And if you have different team colors it is easy to change by using different foods.

For Dessert Duty:


Tailgate Truffles from Stuff by Stace
I have made Oreo balls before, but never have I ever thought of doing them as a tailgate food before this. It is genius and so simple. All it takes is a package of Oreo type cookies (I usually get whatever is on sale) and a pack of cream cheese, and then melting chocolate. But you can easily change the colors of the chocolates to match your team colors. And did I mention how delicious these are?

This recipe looks so good. I am cooking it tomorrow night. I will post a link once I have cooked it. It basically is a bunch of chicken and tortilla pieces and cheese cooked all together. Things like this make great food for tailgates because they are good and easy to make.

Dinner Guests

Just so people don't think that I am going to cook all this food for myself and eat it all, I am going to introduce you to what I call "The Cast of Apartment C14". These are three of my best friends and some of the most amazing girls I know. Thankfully, we are all a little crazy so this apartment is always really fun. 


Roommate 1- Mandi
Mandi is a collaborative education major at Troy and I have lived with her for the past year. She shares my obsession with Disney and Pinterest. Her favorite character is Eyoree, but she is a happy person.

Roommate 2- Hallie
Hallie is a biomedical sciences major at Troy. And she is my best friend. We lived together her freshman year in the dorms and now we are living together again. In our free time we stay on Pinterest and laugh at the funny pictures of cats. She is slightly obsessed with Audrey Hepburn...slightly obsessed might be an understatement.

Roommate 3- Abby
Abby is one of my sister in Sigma Alpha Iota (actually all of our house is SAI but that will be for another day) and she is pretty awesome. She a history and secondary education major at guess where...Troy. And because I have said what everyone else is obsessed with, she is obsessed with tigers and Ironman...well mainly Robert Downy Jr. but who cares.

Boyfriend- Alex
Well he doesn't live with us, but I do feed him a lot and he is pretty awesome. He is a music education major and wants to teach high school band one day. In October we will have been dating three years. And his obsessiosn include music, playing video games, and me!



Now that you know the people involved in my life hopefully you have a slightly better understanding of the people I will be feeding. I am pretty sure they are getting me ready to have a family one day because of the amount of food they consume.

Welcome to my World

Hello, My name is Felecia, I am a senior broadcast journalism major. This blog is going to be started for my Advance Journalism Class, but hopefully I will be able to keep up with this even after the class is over.

This blog will focus on cooking recipes that are suppose to be good for college students. Recipes that are considered low cost, small time commitment, and are delicious. So join me on this great food adventure. As a student in my senior year of college, I have gotten tired of eating the same foods over and over again (mainly fast food or frozen dinners). I love to cook and want to show other students that it is not impossible for a college student to cook good meals on a budget.

I am planning to post a minimum of once a week (as required by the class) but I hope that I will find some awesome recipes to cook and I will just be too excited to wait to share them.

While most of my recipes will come from Pinterest (I am a slight Pinterest finactic), I will use some family recipes or recipes from different cook books. And while the focus of my blog will be about food and recipes, I may or may not include a few random things like crafts or opionion blogs.
